Cauliflower Crust Pizza with Avocado & Egg

This is my favorite paleo pizza ever !!. Also eggs and avocados are my favourite things ever so why not combine them and stick them on a pizza.
So whats perfect healthy and delicious food here .. !




Cauliflower Crust Pizza with Avocado & Egg Recipe


Ingredients
For the Crust:

  • Large Head of Cauliflower
  • 2 Eggs
  • 1/2 Cup of Cottage Cheese

For the Topping :

  • 2 Avocados
  • 2 Eggs
  • 2 Handfuls of Rocket

Instructions : 

  1. Chop your cauliflower just enough so that it will fit in the food processor. 
  2. Blitz it until you have a ‘rice’ consistency.
  3. Either microwave or steam the cauliflower rice for about 3-4 minutes. 
  4. Then wrap it up in a cheese cloth and squeeze as much of the moisture out as you can. 
  5. Add it back to a large bowl and make a well in the middle and add in the cottage cheese and eggs. Using your hands mix and knead the mixture until it starts to bind.
  6. Cover a baking sheet in parchment paper and use your hands to press out the dough. I like to press the middle of the base thinner so that I have a nice thick crust. I decided to make two mini pizzas but it’s up to you!
  7. Pop in the oven at 200’C for about 25 minutes.
  8. Once the crust is cooked, simply mash the avocados and spread them over the crust. Fry the eggs to your liking and pop one in the centre of each of the pizzas. Then sprinkle with rocket, salt and pepper!
